Woodbridge Health Inspections: Ruby Tuesday, Lake Ridge Pizzeria
The Prince William Health District inspected several facilities around Woodbridge and Dumfries during recent restaurant visits.
WOODBRIDGE, VA — Several facilities around Woodbridge recorded violations during the most recent round of health department inspections from Feb. 8 to Feb. 13.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Date inspected: Feb. 8
- Total violations: 16
- This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
- Drinking containers stored on prep table in a manner that may contaminate food, food contact surfaces or utensils.
- There was no soap available at the handwashing sink along the cookline (right side, near dipper well).
- Spray bottle of chemicals along cookline unlabeled.
- Tomatoes that were just sliced were found stored in the Delfield 2 door upright refrigerator at 43 degrees F.
- There were no ambient air temperature measuring devices (thermometers) in the following equipment: 1. Delfield 1 door reach-in refrigerator in the service area 2. Perlick 2 door cooler in the bar 3. Perlick 1 door cooler in the bar (broken) 4. 2 door reach-in refrigerator in the bar 5. 4 drawer refrigerator under grill along cookline 6. Traulsen 2 door reach-in refrigerator.
- Food stored on the floor in the walk-in freezer (boxes of tenders).
- The wet wiping cloths along the cookline and prep area were not properly stored in the sanitizer bucket in between use.
- Dispensing or in use utensils along the cookline were observed to be improperly stored in between usage in standing water at room temperature.
- An irreversible registering temperature indicator was not provided for the hot water mechanical ware washing operation.
- There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.
- The waterline providing water into the dipper well extends down into the water in the dipper well.
- The wastewater pipe out of the handwashing sink on the far left side of the cookline is in disrepair and when the faucet is turned on, the wastewater goes on to the floor. The floor drain at the handwashing sink near the warewashing machine appears to be clogged because when the faucet is turned on, the wastewater goes to the floor.
- The wastewater pipes from the drainboard, sanitize compartment and rinse compartment of the 3 compartment sink at the bar extend down into the floor drain, eliminating the air gaps.
- Litter (cardboard) and old equipment in disrepair was stored adjacent to the outside waste receptacles/dumpster.
- Personal items (coats) were observed stored on shelving with foods (ketchup, etc) in the service area.

- A food employee was observed drinking from an open coffee cup along the cookline while preparing/handling food and/or contacting clean food contact surfaces. Another employee was observed with an open coffee cup in the back kitchen area.
- Observed an employee handling ready to eat rolls without wearing gloves.
- Raw chicken stored adjacent to ready to eat (RTE) celery in Avantco 3 door prep refrigerator; raw chicken and meat stored above ready to eat (RTE) cut lettuce and cooked rice in white upright refrigerator.
- White sauce and pineapple stored uncovered in True 2 door pizza prep refrigerator; various foods stored in Beverage Air 2 door upright freezer stored in open containers; cooked rice and cut lettuce stored uncovered in white upright refrigerator; cut green peppers and onions stored uncovered in walk-in cooler.
- The facility was observed to be cooking a Santorini Gyro Cone, (20lbs; uncooked; comminuted; ingredients: beef, lamb, etc) on a spit in an non-continuous process that is not compliant as only the outer portion of the cone is cooked while the interior remains uncooked for long periods of time.
- Commercially prepared meat balls @111 degrees F being reheated in the steam table.
- Containers of food held for > 24 hours were not date marked.
- Aspercreme was stored near single service condiment containers on the counter.
- The concentration of the chlorine solution in the 3 compartment sink was measured using the test kit and was found to be above the desired concentration, 200+ppm (toxic). This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
- Raid was observed to be stored near single service condiment containers on counter.
- There were no ambient air temperature measuring devices (thermometers) in the following refrigerators: True 2 door pizza prep refrigerator Coke display refrigerator Pepsi display refrigerator True 3 door upright freezer.
- There are multiple/various containers of unidentified foods being stored in different locations throughout the kitchen/dried storage area.
- Boxes of lettuce, etc stored on the floor in the walk-in cooler.
- Employees handling food were observed to not be wearing proper hair restraints.
- The wet wiping cloths used to wipe down surfaces in the kitchen and dining area were stored in a bucket of soapy water.
- Pizza cutter being stored on cloth on counter; blue drinking cups being used as scoops in bulk food containers; ice scoop stored in ice with handle down in ice; condiment containers being used as scoops in spices.
- Single service, carry out containers, were stored with the food contact surfaces not inverted and directly exposed to possible contamination from patrons as they pass by to go to the restrooms. (Plates and condiments were also stored exposed to patrons.)
- Sour cream containers being reused to store other foods in throughout the kitchen; single service condiment containers being used as scoops in spice containers.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (chlorine).
- The 3 compartment sink is in disrepair and the compartments are not capable of holding water without the use of items such as bags, etc to help prevent the water from draining.
- The interior and shelving of the white upright refrigerator is soiled with a build up of debris and spilled food; the shelving in the walk-in cooler and throughout the kitchen is unclean with a build up of debris.
- Extensions have been placed on the original wastewater pipes of the 3 compartment sink so that they now extend down into the floor drain, eliminating the air gaps.
- Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items being stored on the end of shelving used for single service items/foods and on counter tops near salt/pepper/pepper flake shakers.
- The light fixtures (3) in the hood system were found to be missing the protective shields.

- Cut lettuce salads that were just made this morning were found stored in the Continental upright reach-in refrigerators at 51 degrees F (Line #2) and 49 degrees F (Line #3).
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: yogurt and string cheese (both @ 48 degrees F) in the Continental upright refrigerator on Line #2.
- The integrity of the food packaging for two cans of sliced apples were found to be compromised (severely dented along the end seam) and therefore exposing the food to potential contamination.
- Brown sugar in a bulk storage bin was observed to be mixed with buns (to help soften the sugar).
