Woodbridge Health Inspections: Tacos Don Juan, Zaffron, Potbelly
Several restaurants around Woodbridge recorded violations during recent inspections from the local health department.
WOODBRIDGE, VA — Several Woodbridge area restaurants recorded violations during inspections between Aug. 31 and Sept. 6, according to the Prince William Health District.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- The handwashing facility located at the prep station 2 is blocked, preventing access by employees for easy handwashing. Cooking items stored on/in/around sink.
- Employees observed working in the food service area without proper hair restraints.
- The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: Prep tables with EXTRA large cooking pots require cleaning/degreasing/sanitizing of the bottom shelf.
- The nonfood-contact surfaces of the back equipment storage rack (right of 3 VAT sink) were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris.
- The ICE machine is not cleaned as often as necessary to keep it clean and mold free.
- The floor is not smooth, durable, easily cleanable, and/or nonabsorbent. The greater majority of the floor has been worn down to exposed concrete. Concrete has 'drawing' properties that have made the floor uncleanable. It will ABSORB and HOLD any liquid/grease that makes contact.
- The premises are not free of litter. Various spots of clustered materials such as items stored on floor under storage racks.

- The person in charge (PIC) did not demonstrate his knowledge and his Certified Food Protection Manager (CFPM) certification has expired. He failed to give correct and/or complete answers when asked questions concerning cook temperatures, hot and cold holding temperatures, etc. and there were many priority violations observed during the inspection.
- The person in charge did not perform the following duties: 1. Ensure that employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing and providing the proper facilities to wash hands properly; 2. Ensure that employees are properly washing/rinsing/sanitizing all equipment and food contact surfaces; 3. Ensure that employees are cooking foods to the proper temperatures.
- There is no Certified Food Protection Manager (CFPM) on duty during hours of operation as those employees with supervisory and management responsibilities have expired certifications.
- The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
- This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
- The handwashing sink located in the food preparation area is in disrepair (hot water handle broken, no hot water at 100 degrees F) and can not be used to properly wash hands.
- Observed employee washing and rinsing and storing equipment away without properly sanitizing equipment. Upon further investigation, it was determined that there is no sanitizer in the facility.

- Observed a spray bottle of sanitizer (chlorine, 50ppm) used for sanitizing food preparation areas on site, but no bottle of sanitizer (chlorine) to be used in the 3 compartment sink for sanitizing equipment after washing & rinsing.
- The 3 compartment sink was lacking a plug to allow both the wash and sanitize compartments to be sealed and able to hold water to properly wash/rinse/sanitize equipment.
