Woodbridge Restaurant Inspections: 17 Violations At 1 Facility
The Prince William Health District recorded violations at several Woodbridge restaurants during a recent round of inspections.
WOODBRIDGE, VA — Several Woodbridge restaurants recorded violations during health inspections between Oct. 26 and Nov. 1.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- The thermometer for the walk-in freezer appears to be in disrepair or not measuring the ambient air temperature properly.

- The handwashing sink near the 3 compartment sink was being used to rinse equipment and store wet wiping cloths.
- Can opener blade and exterior of flour container unclean; other parts of the can opener were rusty.
- Spray bottles of chemicals stored near clean equipment in warewashing machine area and up front near containers of pizza dipping sauces.
- There was no ambient air temperature measuring device (thermometer) in the Randell pizza prep refrigerator. The thermometer on the walk-in cooler was in disrepair
- White powder food stored in container that was not labeled properly with the common name of the food.
- An extension has been placed on the original wastewater pipe of the wash compartment of the 3 compartment sink so that it now extends down into the floor drain, eliminating the air gap.

- Clean equipment (gold lexan trays) stored on the shelving with the food contact surface exposed to dust and other contamination.
- Both waste receptacles in the women's restroom used by the food service staff and customers were not covered.

- The person in charge (PIC) did not demonstrate his knowledge as he had no Certified Food Protection Manager (CFPM) certification, he explained that he had not received training concerning proper cold holding food temperatures, proper hand washing, storage of toxics, etc and there were many priority violations observed during the inspection.
- There is no Certified Food Protection Manager (CFPM) on duty during hours of operation as those employees with supervisory and management responsibilities have no certifications.

- Deli meat slicers, cutting boards and grill unclean with large amounts of food debris accumulated on each of them. Staff indicate that slicers are only cleaned at the end of the day.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: ham and cheese in the display refrigerator; salami in the Turbo Air reach-in refrigerator; cut tomato and shredded lettuce in the front and back counter refrigeration units.
- Various containers of medicines such as DayQuil and Vicks Vapo-rub stored along with single service items.
- Spray bottles of chemicals such as Kaboom and glass cleaner stored near clean equipment in warewashing machine area, adjacent to bread rack full of baked bread and hanging on shelf above single service items such as white paper straws.
- Clean equipment (metal pans) were stored on the shelving with the food contact surface exposed to dust and other contamination.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (quaternary ammonium).
- The hose attached to the mop sink faucet was observed to be fully extended into the basin thus creating a potential backflow issue.
- The floors throughout the kitchen are unclean with visible debris and greasy build up.

- The integrity of the food packaging for a can of hot fudge topping was found to be compromised (dented along the side and end seams) and therefore exposing the food to potential contamination.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: eggs on top of and inside 4 drawer refrigerator at 42 and 43 degrees F.
- There were no ambient air temperature measuring devices (thermometers) in several refrigeration units including the 4 drawer refrigerator and the reach-in near the donuts.
- There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. One hose was observed to be fully extended into the water. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.
- The sprayer arm attached to the faucet at the 3 compartment sink in the back is in disrepair with water spraying up the wall.
- Light bulbs in the hood system burnt out or not operational in the ventilation hood system. The ventilation hood system including filters over the ovens are rusted and not easily cleanable.

- Observed Employees were working in the food service area without proper hair restraints.
