Woodbridge Restaurant Inspections: 22 Violations At 1 Eatery
Health inspectors found 22 violations at one restaurant, while another restaurant resolved a mice complaint.
WOODBRIDGE, VA —Several facilities in the Woodbridge area recorded violations during recent health department inspections between March 1 and 13.
Health inspectors conduct most restaurant, school, child care center and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

- Raw beef, chicken and fish in secondary packages (not original packaging) stored adjacent to each other in the freezer.
- Knives were observed to be stored in between the sides of the prep/reach-in refrigerators along the cook line in between use.
- Ground pork sauce (made in food establishment, from walk-in cooler) being reheated in the rice warmer; miso paste soup (made in food establishment, from walk-in cooler) being reheated in soup warmer.
- Chemicals (soap/bleach) stored on dry food storage shelving with food.
- Fish cake, made this morning, found cooling covered with plastic wrap on counter top.
- Various white powder/granular foods were stored in clear containers that were not labeled properly with the common name of the food in English.
- Food (bean paste, sauce) stored on the floor under the handwashing sink; various foods stored on floor in walk-in freezer.
- Foods being prepared at the prep sink are subject to contamination from the closely adjacent 3 compartment sink (dirty dishes side).
- Dispensing or in use utensils along the cook line were observed to be improperly stored in between usage in standing water at room temperature.
- Clean equipment including pots and pans were stored on the shelving with the food contact surface exposed to dust and other contamination.
- Various single use metal cans and containers being reused to store other foods in throughout the kitchen.
- Foods in reach-in refrigerators and walk-in cooler are stored in containers designed as home storage containers.
- Foil and paper towels are being used to line the ingredient cart along the cook line; cardboard egg crates and foil are being used to line shelving under hood; foil is being used to line various shelves throughout the kitchen; paper towels held on by rubber bands are being used to cover squirt bottles of liquid ingredients.
- Observed milk crates and soda crates being used as shelving. Bricks are being used to support metal shelving only 3 inches off of the floor.
- Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items such as coats being stored over the clean mixing bowl.
- Observed that inadequate lighting was provided in the walk-in refrigerator (measured at 1.6 foot candles).

- The following refrigeration units were not holding temperatures of 41 degrees F and below: Viissani refrigerator/freezer at 54 degrees F, 1 door reach-in refrigerator, under counter, at 55 degrees F, and 1 door glass front "cold drinks" upright display refrigerator, in disrepair and empty.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (chlorine).
- Handwashing soap and a paper towel dispenser were observed to be located at/installed over the 3 compartment sink.
- The wastewater pipe(s) of the 3 compartment sink are not properly air gapped.
