Woodbridge Restaurant Inspections: Dairy Queen, The Palace
Several Woodbridge facilities recorded violations during recent inspections from the Prince William County health department.
WOODBRIDGE, VA — Several facilities from eastern Prince William County recorded violations during the most recent round of health department inspections from July 5 to July 10.
COVID-19 restrictions have relaxed around the state, and health inspectors conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
- The establishment could not demonstrate the ability to provide written procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment.

- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution used in the 3 compartment sink (quaternary ammonium). *The only one found today in the kitchen is for chlorine.

- There is no Certified Food Protection Manager (CFPM) on duty during hours of operation as those employees with supervisory and management responsibilities have no certifications.
- The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.Corrective Actions: Provide training and the proper documentation to ensure that all food employees and conditio
- The following handwashing sinks were found to have hot water at less than 100 degrees F: *handwashing sink at bar #3, 72 degrees F.
- Various foods in white bulk storage containers were not labeled properly with the common name of the food.
- Utensils used to dispense ingredients in bulk containers were observed to be improperly stored in between usage with the handles down in the foods.
- Foil was observed to be used to line shelving units and parts of the steam table.
- The following refrigeration units were in disrepair: Koolit 2 door reach-in/prep refrigerator is missing a handle and has a leak inside; Turbo Air 2 door upright refrigerator, 1 door is locked due to broken key in lock

- Soap was not provided at the hand washing lavatory in the kitchen.
- No hand drying provisions were provided at the handwashing sink in the kitchen.
- Employees observed working in the food service area without proper hair restraints.
- The cutting board(s) along the prep line are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
- Ventilation is not sufficient to keep rooms free of excessive heat.
