What Type of Restaurant Does Downtown Need?
With the closing of Red Rooster Cafe, what do you think should go in that space?

I hate to see any small business fold, regardless of the circumstances. But as it appears that there will be a vacancy where the Red Rooster Cafe was, what type of restaurant do you think would thrive there?
On my last blog post "Another Gig Harbor Restaurant Closes" regarding the closing of Reflections at the Airport, Bob made an excellent comment that Reflections could move to the Red Rooster Cafe location. This started me thinking about other possibilities.
What kind of restaurant would you like to see open up there? Or do we already have too many restaurants downtown? What is your vision for that space?
