Restaurateur Jason Wilson Named Teatro ZinZanni Chef; Expands Lakehouse Brunch
'Love, Chaos, and Dinner' opens next month at Redmond Marymoor Park's Spiegeltent. Meanwhile the new Bellevue brunch begins Sept. 30.

BELLEVUE, WA – Local restaurateur and chef Jason Wilson keeps upping his game.
The James Beard award-winner was selected to create the menu for the upcoming run of Teatro ZinZanni's Love, Chaos, and Dinner opening next month at Marymoor Park in Redmond, and also is unrolling a weekend brunch at his Bellevue eatery The Lakehouse.
Teatro ZinZanni recently announced its partnership with Wilson for the limited engagement of Love, Chaos, and Dinner, where guests inside the famous spiegeltent will dine on his regional American cuisine.

"The menu, exclusively created and prepared for Teatro ZinZanni, will be designed with the iconic institution’s multi-course service style in mind while infusing his signature style on the unique dining experience," operators of Teatro ZinZanni said.
“Ever since I first experienced Jason’s work at Crush, it has been a secret dream of mine to bring him into the zaniness that is ZinZanni,” Markus Kunz, Teatro ZinZanni executive director said. "We could not be more excited to share his work with our audiences starting this fall!”

The complete menu will be announced in coming weeks.
Meanwhile, Wilson's Bellevue establishment, The Lakehouse, his take on "Northwest Farmhouse" cooking, will begin a weekend brunch Saturday, Sept. 30 and running Saturdays and Sundays from 7 a.m. to 4 p.m.
His brunch menu will offer farm-fresh ingredients from Lazy B Ranch, Mad Hatcher Farms, Frog Hollow Farms, Coffee Flour, and others with breakfast and lunch options.
Dishes will include:
- Ancient Grain Porridge, Chia & Flax Bowl, Almond Milk, Berries & Stone Fruits
- Chocolate Coffee Flour Pancakes, Caramelized Banana, Walnuts, Sticky Toffee
- Grilled Albacore Tuna “Steak,” Summer Squash & Garden Bean Salad, Hens Egg, Heirloom Tomato, Black Olive Tapenade
- Dungeness Crab & Avocado “Benedict,” Toasted Spices & Seeds, Poached Eggs, Basil Choron, Salt Roasted Potatoes
- Mishima Ranch Bavette Steak, Anson Mills Cheddar Grits, Quince, Brussel Sprouts, Sunnyside Up Eggs
In addition, there will be a selection of refreshing spritzers that can be served non-alcoholic, as a mimosa or a cocktail, including Grapefruit, Tarragon; and Pear, Ginger, Mint. The House Bloody Mary is a concoction of fresh vegetables and a housemade bloody mary mix.
