Ex-Aqua by El Gaucho Chef to Headline Fundraising Dinner at Shorewood

Shorewood Culinary Arts will host Chef Peter Levine on January 26.

The Shorewood Culinary Arts program will host Peter Levine, former executive chef at Aqua by El Gaucho (formerly Waterfront at Pier 70), as guest chef for a fundraising dinner on January 26 at 6 p.m.

Levine is a graduate of the California Culinary Academy in San Francisco, and worked at many notable San Francisco restaurants such as the Balboa Café, Harry’s Bar and American Grill, and Blue Fox, before coming to Seattle. Since then, Levine has served at executive chef at the likes of Vivanda Ristorante in Pike Place Market, The BluWater Bistro at Lake Union and Greenlake, and Isabella Ristorante in downtown Seattle.

The guest chef dinners give students a chance to work with acclaimed local chefs, and are an important fundraiser for a program that gets very little state funding.

“We use a good chunk for field trips to visit restaurants, hotels, food manufacturing plants and other industry businesses,” said Diana Dillard, Culinary Arts Instructor at Shorewood. “We also use funds to buy needed equipment and uniforms for the students.  We purchase food such as cheese or specialty salts for tastings.  Last week, we used some of the money to buy 6 different types of raw Pacific oysters in the shell so the students could learn how to shuck and taste the difference between the oysters.”  

Shorewood has been hosting guest chef dinners since the late 1980s.

“When my husband and I owned the Rain City Grill in the late 80's, we were asked to be guest chefs at Shorewood, and we prepared and served a dinner with the students,” said Dillard. Other past chefs have included Jonathan Sundstrom of Lark, Christine Keff of Flying Fish, Brock Johnson of the Dahlia Lounge, and Seth Prigg of Ray’s Boathouse, the latter two graduates of the Shorewood Culinary Arts program.

Dillard said that at last count, only around 12 seats remained for the dinner. The dinner is $30 per person, and payment must be made the week prior to the dinner to reserve a spot.
