Making your own salad dressing is just a matter of knowing some basic formulas. You can create an endless supply of delicious, natural dressings by experimenting with different oils, vinegars, fruits, herbs and seasonings. Learn the secrets to making the perfect mayonnaise, a flavorful fat-free dressing and create your own signature blend to take away. Taste a range of different farm-fresh salad greens and get ideas for which leaves pair well with which flavors.

Instructor Gill Dey is the culinary classes director of the cook school at 21 Acres. She trained as a home economist and journalist and has over 25 years’ experience as a magazine journalist, book editor and food consultant. She is a four time cookbook author, food writer and organic gardener.
