Lent is a very popular time for many Wisconsin families to enjoy traditional Friday fish fries. While fish fries are famous in Wisconsin, they aren’t always the healthiest meal option. This Lenten season, when it comes to seafood choices, a great alternative to fried fish is herring!
Herring is full of healthy omega-3 fatty acids, as well as calcium, protein and vitamin D. Along with the health benefits of herring, the fish has also been a traditional Wisconsin staple for decades. Whether it’s a convenient alternative meal on Fridays or a meat-free snack during Lent, herring is a delicious and nutritious seafood option. It can be enjoyed straight from the jar, or included in a recipe.

Ma Baensch Herring Salad

- 1-24oz. jar Ma Baensch Marinated Herring in Wine Sauce, drain, discard sauce, reserve onions and cut pieces into quarters
- 1/2 C dill pickle relish
- 1 medium apple*, cubed, peeled if desired
- 1/2 small Spanish onion, halved and sliced
- 1-15oz. can cooked, diced potatoes, drained
- 1-15oz. can cooked, diced beets, drained
- Reserved onions
Dressing
- 1 C whipped cream
- 1 T white vinegar
- 1 t prepared mustard
- 1/2 t pepper
- 1/2 t whole dill weed, dried (if available, use 1 1/2 t fresh dill weed)
Combine all dressing ingredients and set aside. Toss all salad ingredients, including reserved onions, in a large bowl. Serve salad with dressing on the side, allowing guests to drizzle on dressing as desired. Garnish with fresh dill weed, if available. If preparing ahead of time, cover and refrigerate salad and dressing separately.
*For a tart variety try Granny Smith apples. For a sweeter variety try
Braeburn.
