Need another item for garden-fresh zucchini? How about zucchini chips?

Zucchini is starting to arrive in area gardens and Farmer's Markets. 
What else to do with the versatile vegetable, besides making Zucchini breads, grilling it and stuffing it.

How about another idea ?

Oven Baked Zucchini Chips:

Wash with cool water and dry your Zucchini first to remove any soil. Then, slice your Zucchini into thin circles. Pre-heat your oven to 425 degrees and place a sheet of non-stick aluminum foil on a cookie sheet.

In a medium sized bowl, measure out 1 cup of Italian bread crumbs or Italian panko bread crumbs. Add in 1/2 cup of grated parmesan cheese, 1 tsp. garlic powder, 1/4 tsp. of fresh cracked pepper. (no need to add salt, as the cheese takes it place) Dip your zucchini slices into another bowl in which you have poured 1/2 cup of low-fat milk.

Then dip into the bread crumb mixture. Shaking off any excess.
Lay the slices flat onto the foil, not touching each other.
Cook in your pre-heated oven for 20-30 minutes. checking to make sure they do not over brown, depending on the thickness of your slices.
Serve warm and enjoy.
