Pesto Pinenut Quiche

This recipe was born out of laziness and lack of ingredients. As simple combination of my 4 favorite things: quiche, pesto, pinenuts and feta. Pair this with a field greens salad drizzled with balsamic vinaigrette and you have the perfect brunch or lazy weeknight meal.

Pesto Pinenut Quiche
Serves 4

  • 4 eggs
  • 2 tablespoons pesto
  • 2 tablespoons pinenuts
  • 1/4 cup feta
  • 1 refrigerated pie crust

Preheat oven to 400 degrees. Press crust into a greased pie plate. In a large mixing bowl, whisk the eggs and pesto until combined. Pour into crust. Sprinkle with pinenuts and feta.

Bake for 20 minutes or until cooked through and the crust is golden.
