Blog Post: Watermelon Shaved Ice
Have a huge watermelon in your fridge that is lasting forever? This refreshingly fruity treat will have you coming back for more and more spoonfuls. Problem solved.

As I opened my refrigerator and stared at a huge half of a watermelon, I immediately thought of a recipe that I’ve been meaning to make for a long time. I originally saw a version of it on a cooking show and thought it looked refreshing for hot days when you want something cool and sweet. I love that it is made with fresh fruit, so although it has a little sugar in it, you still feel like you’re eating a healthier version of a snow cone.
Since watermelon is a summertime staple in my house, it’s a nice change to eat it in another shape other than a triangle or square. Eat it out of a bowl or a glass, and with every spoonful, you taste the subtle flavors of watermelon and lime fused together. Neither ingredient is overpowering but a perfect match made for each other with a slight crunchiness.

You can make this with any amount of watermelon that you have. I just needed the space in my fridge so decided to use it all up.
The proportions are fairly loose but here’s the recipe I used and it came out just right:

8 c seedless watermelon
½ c sugar
2 T lime juice
Cut the watermelon into chunks and put half in a blender along with half of the lime juice and half of the sugar. Blend well and pour into a 9x13 glass dish. Blend the other half of the ingredients and add to the dish.
Cover with plastic wrap and put it in the freezer for a few hours. Once the mixture begins to harden, use a fork to “rake" it so the liquid looks like small pieces of ice. Continue doing this every hour or so until all the liquid freezes and it looks like shaved ice.
I’m now hooked and already thinking of what other fruit might work well shaved. Hmmm...
