Blog: Why is Kale So Healthy?

ALL HAIL the MIGHTY KALE: this green leafy veg is considered one of the most nutritious vegetables on earth! So just what makes it SO good for us? 1 cup of  kale packs 100% of  daily recommended vit A, 200% vit C, and over 1,000% vit K!  Th...at is a lot  more antioxidant nutrients than you get from the more commonly consumed spinach. It also belongs to the cruciferous veg family (along with broccoli) which means that it provides sulphur-containing phytonutrients that may also help fight cancer. Kale is also very low in calories and high in fiber. which makes it a great “fill-you-up food.”

I recently tried kale for the first time and found it to be a lot more bitter than spinach. I simply sauteed it with garlic and olive oil. Next time I plan to add other ingredients for a wider variety of flavors. Any advice for cooking tasty Kale??

*CAUTION: Be careful eating kale if you are taking an anticoagulant drug like Coumadin since the vit K content can interfere with blood clotting
