
Beverly Hills, Calif. - Your grandmother’s assisted living community may be the last place in the world you would expect to find a chef the caliber of Gloria Felix. The Cordon Bleu-trained chef has worked the stoves at many well known Los Angeles restaurants from Jar to Lucque’s to Blair’s and she’s been mentored by some of the area’s preeminent chefs, particularly Chefs Suzanne Goin of Lucques and AOC and Neal Fraser of Grace. She’s even been the on-camera sous chef to Gordon Ramsay on his hit reality show Hell’s Kitchen. So where in L.A. is Chef Felix now?
After opening – and, sadly, closing – her own restaurant, Reservoir, Chef Felix joined The Watermark at Beverly Hills in September of 2012. The boutique assisted living community is located at 220 North Clark Drive. There she was charged with the tasks of revising menus to ensure the most palatable, healthy choices and creating a true, fine dining restaurant experience for residents and their families, many of them patrons of the establishments she has helped make famous.
Although this was a new and somewhat less public endeavor for Chef Felix, she welcomed the challenge of exploring how to balance the nutritional needs of Watermark residents with an exciting, palatable and choice-filled menu. Imagine satisfying the same customers with three meals a day, 365 days a year. Such a task might daunt most of the world’s best chefs. Chef Felix, on the other hand, rose to the challenge.

This month, Chef Felix proudly unveiled her new menu, featuring daily specials along with New Zealand Lamb Chops, Braised Pot Roast, Holishkes (Stuffed Cabbage), Skirt Steak with a Chimichurri sauce, Kosher Chicken and Wild Atlantic Salmon pan seared with a lemon aioli sauce. Sides include, to name a few, Barley with Grilled Asparagus, Broccoli Florets, Currants and Toasted Pecans, Braised Kale with Fingerling Potatoes and Roasted Heirloom Baby Tomatoes and Kosher Turkey Bolognese with Linguini Pasta and Shaved Parmesan.
