
It's been 2 weeks since Mardi Gras left New Orleans. Which means the good times should be rollin' into Claremont right about now! We'll start with Salade Fontaine -- a mixed green salad with an amazing vinaigrette made by reducing white wine to a syrup. Seafood Gumbo will feature a traditional roux with the nawlins trinity (onions, celery and peppers), okra, tomatoes and a variety of seafood, accompanied by red beans and rice. For dessert, we'll make light and tasty baked apples with a sweet potato pie filling. Fruity Beaujolais or sparkling cranberry juice will be our liquid refreshments.

Held in my own home kitchen in Claremont, we will take advantage of my well-stocked international pantry, culinary garden and library of over 500 cookbooks. These are hands-on, fun-filled classes that are almost like "cooking parties." We will prepare the entire meal together and enjoy it at the end of class!
The cost of each 2-1/2 hour class is $50 per person, which includes a shared dinner with beverages, a recipe packet (so you can re-create each dish in your own kitchen), and advice in locally sourcing exotic ingredients.
