Last-Minute Thanksgiving Recipe: Creamy Corn Pudding

Thanksgiving is just a few days away! If you’re in search of an easy yet show stopping dish to serve at your family dinner we’ve got just the recipe for you. Andaz San Diego’s Chef de Cuisine, Laura de Martin, has a creative comfort food recipe to spice up the traditional Thanksgiving feast, Corn Pudding! Made with three types of corn – creamy, fresh and cornmeal – and butter it’s a delicious dish to prepare in less than one hour.

• 1 Can of Cream Style Sweet Corn
• 3 Cups of Whole Fresh Corn Kernel

• 1 Tbl Fine Grind Corn Meal
• 2 Tbl Sugar
• 1 Tsp Salt
• 1 Tsp Baking Powder
• 2 Eggs, Beaten
• ¼ Cup Half and Half
• 4 Tbl Butter, Melted
Servings: 4
Instructions:
1. Mix the corn in a large bowl
2. Mix the corn meal and other dry ingredients in another bowl, add the corn mixture and stir
3. Add eggs, half and half, and butter, stir until mixed
4. Pour the mixture into a greased casserole dish
5. Bake at 350’F for about 40 minutes
