
Everyone loves going out to eat, but chances are that your meal out will be the gift that (potentially!) keeps on giving- sometimes three times over. What I’m talking about, of course, is leftovers.
I say “potentially” because really- leftovers can be hard to re-cook. Whether you make it yourself, or bring the box home, anything that passes through the microwave to be reheated looks like a sad, schlumpy pile of goop.

I just got Thai the other night, and was determined to keep it restaurant quality. I’m three meals in and still looking picturesque.

The first trick is use the stove, not the microwave. A frying pan with a tiny bit of oil is really the first line of defense.
Second- if it has veggies in it, add more. Fresh veggies add color and crunch that will revitalize a dish.
Third- Season everything. Add a pinch of salt, a dash of pepper, and some garlic powder- or whatever spices were used to create the dish originally. You don’t need a lot, just a few sprinkles to refresh the flavor. If you have extra sauce from the restaurant, you can water that down and cook the food in that. It will change the flavor a bit, but it will taste fresh!

Servings 2 generous helpings
Ingredients:
1tsp Olive Oil
1 cup mixed veggies
Chopped carrots
Broccoli
Cauliflower
(I also added last night’s dinner side, ½ cup roasted brussel sprouts!)
½ cup water
1 cup Pad See Ew takeout
Flat wide noodles
Carrots
Broccoli
White onion
Green onion
½ small jalapeno, diced (more if you like it hot!)
2 tbsp Thai sweet chili sauce with cucumber
*Thai spice (if you have it)
Salt
Pepper
Garlic powder
Cook new carrots, broccoli, cauliflower and jalapeno in oil, add spices, salt, pepper, and chili sauce. Coat the veggies evenly with sauce. Stir in water slowly. Add Pad See Ew takeout, breaking up the stuck noodles. Mix well in the pan. Add more spices if needed, and allow water to cook off.
