Bayview Pasta Tasting Menu Event Is Monday Night

HEALDSBURG - Chef Joshua Felciano, of Bayview Pasta, is hosting a six course tasting menu highlighting winter ingredients, and his hand-milled, and hand-cut pasta on Monday night, February 15, beginning at 6:30 p.m.

The address is 8245 California Highway 128, in Healdsburg, location of a large villa, according to Felciano.

Just a handful of tickets remained for the event as of Sunday morning. Check on availability here.

Wine pairing is available for purchase. The dinner starts at 7 p.m., but you’re urged to come early and enjoy a negroni with the Chef by the wood oven. Gremolata olives and nuts will be available to snack on while you warm up before dinner.

Items on the menu for Monday night include:

• tortellini, parmesan brodo, lemon oil primi
• tajarin or tagliatelle, butter, nutmeg, white oregon truffle secondi
• grass fed beef short rib, porcini, Preston red flint corn and Rancho Gordo hominy wood oven soft polenta quarto
• chicory, fennel, meyer lemon, hazelnut, goat cheese insalata

According to his website, Felciano, a Healdsburg native, has lived in San Francisco for the last six years working at “some of the most inspirational Italian restaurants in the city.”

His work in San Francisco came after 6 years as Sous Chef at one of Sonoma County’s most historic wineries, Simi Winery.

After working at Piccino restaurant for two years, Chef Felciano decided on taking a new approach to making pasta. He focused on the actual grain, and bought a mill, beginning to produce his own flour.

Felciano started his business, Refined Simplicity, in 2015, featuring Bayview Pasta.
