Cook with Chef Charlie Palmer and other New Events Enliven Healdsburg
A local-led immersive learning program brings crafts, cocktails, and cooking classes to town

Appellation, a new Healdsburg-based hotel group from Chef Charlie Palmer and luxury hospitality veteran Christopher Hunsberger, has added to its slate of culinary and craft classes for autumn and winter 2023. Elevated, expert-led, and always entertaining, these classes are for the community: rotating throughout spaces in Sonoma County restaurants and tasting rooms where locals can learn new skills in a convivial atmosphere.
Appellation’s Healdsburg hotel will open next year, but this immersive learning program gives a taste of what is to come. Each Crafted at Appellation class focuses on a particular art form, with experts to give hands-on instruction. The focus is not just on learning a fascinating new skill, but doing so in tandem with your neighbors. Participants enjoy wine from a local winery paired with bites from Chef Charlie Palmer, and go home with both a new hobby and new friends.
October’s offerings include a way to brighten up your space with nature. Moss wall art (October 21st, 2023) is a novel and artistic way to bring greenery into your home. Participants will use a variety of preserved mosses to create a long-life, no-upkeep frame bursting with color and texture that add freshness to any room.

Other autumnal events include a limited-access fall craft cocktail class with Charlie Palmer and pre-release of Charlie’s new sparkling wine (October 28th, 2023). Led by Chef Charlie Palmer and one of his mixologists, this hands-on event uses Sonoma Country ingredients to create three autumn-themed cocktails that bring warmth and good cheer to this time of year. Participants will also get to sample the new wine, Cuvee by Palmer & Co. and and take home a signed bottle.
For serious home cooks, a very special cooking class and lunch (November 11th, 2023) with James Beard Award winning chef and Appellation co-founder, Charlie Palmer, in the kitchen of his lauded Dry Creek Kitchen restaurant. Join Charlie for a hands-on cooking class that teaches participants to prepare two exquisite duck dishes, perfect for your holiday table.
Finally, joyfully welcome the holiday season with one of the most popular Crafted classes: wreath-making (November 29th & 30th, 2023).You’ll learn how to arrange fragrant Sonoma County evergreen branches into an elegant display; then adorn your wreath with accessories and hand-tied bows. Bring home the finished product to hang on your front door, where it will welcome each visitor with an infusion of holiday spirit.
