Start your Sunday morning with a cozy Japanese breakfast experience at Taste Eatery in Lake Forest.
In this 90-minute hands-on cooking class, participants will learn practical Japanese cooking techniques while preparing a traditional-style breakfast using fermented seasonings such as miso, salt koji, and soy sauce koji.
<h3>🍚 What You'll Make</h3>
Miso Soup with Traditional Awase Dashi Learn how to make Japanese soup stock from scratch using kombu and dried bonito flakes, then turn it into a comforting miso soup.
Dashi-Maki Tamago Make a soft, fluffy Japanese rolled omelet seasoned with dashi and koji, served with grated daikon and soy sauce koji.
Steamed Salt-Koji Salmon with Shiso Learn how salt koji can be used as a traditional fermented seasoning and prepare tender salmon using a gentle steaming technique.
Haiga-Mai Rice Enjoy steamed Japanese germinated/brown rice as part of the complete breakfast.
Koji Amazake Finish with a naturally sweet fermented rice drink, with optional matcha.
There will also be an optional tasting of natto with soy sauce koji and ama koji for those interested in exploring more of Japan's fermented food culture.
<h3>👩‍🍳 A Truly Hands-On Experience</h3>
This is not a demonstration-only class. Participants cook together in small teams of 2–3 people at their own station, practice the techniques, and then sit down to enjoy the Japanese breakfast they've prepared.
The class is also a wonderful way to spend a Sunday morning with a friend, partner, or fellow food lover.

Dashi is one of the foundations of Japanese cooking. In this 60-minute hands-on class, you'll learn how different ingredients create completely different dashi flavors—and how to use them in everyday Japanese cooking.
<h3>🍲 What You'll Learn</h3>
You'll make and taste three traditional Japanese dashi stocks:
Kombu &amp; Katsuobushi Dashi Kelp and dried bonito flakes—the classic Japanese dashi.
Kombu &amp; Niboshi Dashi Kelp and dried sardines for a deeper, more savory flavor.
Kombu &amp; Dried Shiitake Dashi A mushroom-based dashi featuring the natural umami of dried shiitake.
You'll then use your freshly prepared dashi to make:
🍜 Homemade Men-Tsuyu (Japanese noodle dipping sauce) 🍲 Miso Soup from scratch
You'll enjoy the food prepared during class, including fresh udon noodles and Seasonal Nibitashi (Japanese simmered vegetables).

This isn't a demonstration-only class.
You'll actively participate in the cooking process and leave with:
• 600 ml Kombu &amp; Shiitake Dashi • 240 ml Kombu &amp; Niboshi Dashi Men-Tsuyu • Recipe guide to recreate the dishes at home
You'll also learn practical techniques you can use beyond this class—how to choose the right dashi for different dishes and how traditional Japanese ingredients create depth of flavor without relying on instant soup mixes or flavor enhancers.

Learn how to make traditional Japanese miso from scratch in this hands-on fermentation workshop in Lake Forest.
Move beyond buying miso at the store and learn how this traditional Japanese fermented food is made—and how you can successfully ferment and age your own at home.
During this 90-minute workshop, each participant will prepare approximately 1.5 kg of handmade miso using four simple ingredients:

Soybeans
</li>
<li>
Rice koji
</li>
<li>
Salt
</li>
<li>
Water
</li>
</ul>
You'll learn the basic process of making miso, how natural fermentation works, how to care for your miso while it ages, and tips for avoiding common mistakes. 
<h3>🍶 Three-Miso Tasting Experience</h3>
The workshop also includes a guided tasting of three different handcrafted misos.
You'll explore how different beans and aging periods can change miso's flavor, aroma, color, and depth.
The tasting may include:

Yellow soybean miso
</li>
<li>
Red soybean miso made with rare Japanese beans
</li>
<li>
Chickpea miso or red bean (azuki) miso
</li>
</ul>
Miso will be served with prepared miso soup and fresh vegetables so you can experience the different varieties in a practical way. Tasting varieties may change based on seasonal availability. 
<h3>🎁 Take Home Your Own Miso</h3>
Each participant will take home approximately 1.5 kg of handmade miso, along with a fermentation guide and tips for aging it successfully at home. 
The class is fully hands-on, and each participant makes their own batch rather than simply watching a demonstration.
The instructor, Hitomi of KOJI &amp; More, was born and raised in Japan and has visited traditional Japanese miso breweries to learn more about natural fermentation and long-aged miso.
Family-friendly: No knives or stovetop cooking are involved. Children may participate with a parent or guardian.
Vegan: The miso-making process itself is naturally vegan. A vegan tasting option using kombu and shiitake dashi is available with advance notice.
