A Koji Basics Workshop&nbsp;will be held on Saturday, May 9 at 10:00 AM at Taste Eatery in Lake Forest, focusing on learning how to make Koji-based seasonings and the power of Japanese fermentation.
Discover Koji, the fermentation culture behind Japanese cuisine. In this hands-on workshop, you’ll make your own seasonings and take home over $27 worth of koji-based products. Experience how fermentation enhances flavor and nutrition through guided tastings and demos. Your creations will finish fermenting at home, with the knowledge and confidence to use them daily.
This class is open to ages 14+; participants 17 and under must attend with an adult.

Welcome to Sushi Boat! We are proud to offer you the finest delicacies, hand-crafted by our master sushi chef. Are you new to conveyor belt sushi? You’ll love it! Our chef creates masterpieces and places them on the belt, which brings the sushi right to you.
Just grab whatever looks good as it passes you by and enjoy! Our staff is also on hand to help you if you need it. So take a seat—it’s all you can eat!
Each turn, players perform their choice of actions, including taking plates of sushi off the revolving 'belt' on the board, paying staff tiles for effects, buying side dishes and more.
As you eat, you’ll stack your Plates in front of you. You score points by eating off matching Plates, and for eating a wide variety of sushi types. And you’ll need to pay attention all the time, because you never know when someone will start a Wasabi Challenge!
When the side dish deck runs out, the game ends and players calculate their victory points - highest score wins!

I’m hosting a hands-on Japanese cooking class on Saturday, May 9 at 1:00 PM at Taste Eatery, where we’ll explore the rich flavors of traditional Japanese fermentation using sake lees and miso.
In this small-group class, you’ll learn how to prepare a comforting, home-style Japanese meal featuring premium black cod (with a vegan option available), along with seasonal dishes that highlight natural umami and balanced flavors.
We’ll cover how sake lees (a nutrient-rich byproduct of sake brewing) can enhance both flavor and nutrition, and how to incorporate it into everyday cooking. You’ll also make a versatile sake lees &amp; miso seasoning to take home and use in your own kitchen.
This class is designed to be relaxed, interactive, and beginner-friendly—perfect for anyone who enjoys Japanese food, is curious about fermentation, or is simply looking for a fun local experience.MENU:
1. Miso Soup from Scratch:
Made with bonito flakes &amp; dried sardines, seasonal vegetables, mushrooms, and a secret ingredient for deeper aroma and flavor.
2. Seasonal Vegetable Salad with Japanese Aromatics: A refreshing salad featuring seasonal vegetables plus Shiso leaf &amp; Myoga (Japanese ginger), finished with ponzu-based dressing.
3. Black Cod Takikomi Gohan (Seasoned Rice Dish)*: Rice cooked with miso &amp; sake lees marinated black cod, burdock root, carrots, dashi, and soy sauce koji.
*Vegan option: Sake lees &amp; miso marinated mushrooms will be used instead of fish while still creating a deeply savory takikomi rice.
4. Hand-Whisked Matcha Amazake Latte (Iced): Whisk your own premium matcha using a chasen and pour it over a base of Koji Amazake and plant-based milk.

Each participant will also have the option to make approximately 8 oz of a sake lees &amp; miso seasoning mixture to take home.

We’ll be using Koji (authentic fermentation culture) to create a meal that is gentle on digestion but packed with Umami flavor. If you want to learn how to prepare a wholesome, healing meal from scratch, come cook with me! 🍚🐟

1. Miso Soup with Traditional Awase Dashi: A soothing miso soup made with kombu &amp; dried bonito flakes dashi, finished with spinach and mushrooms. 
 
2. Dashi-Maki Tamago (Japanese Rolled Omelet): Fluffy rolled egg seasoned with dashi &amp; koji seasonings, served with grated daikon and soy sauce koji. 
 
3. Steamed Salt-Koji Salmon with Shiso: Tender, umami-rich salmon marinated in salt koji and gently steamed for maximum nutrition and flavor. 
 
4. Steamed Haiga-Mai Rice (served, not cooked in class) : A nourishing, fiber-rich Japanese rice served alongside the meal. 
 
5. Koji Amazake (served, not cooked in class) : A naturally sweet, fermented koji drink topped with optional matcha.
