Learn how to make traditional Japanese miso from scratch in this hands-on fermentation workshop in Lake Forest.

Move beyond buying miso at the store and learn how this traditional Japanese fermented food is made—and how you can successfully ferment and age your own at home.

During this 90-minute workshop, each participant will prepare approximately 1.5 kg of handmade miso using four simple ingredients:

  • Soybeans
  • Rice koji
  • Salt
  • Water

You'll learn the basic process of making miso, how natural fermentation works, how to care for your miso while it ages, and tips for avoiding common mistakes.

🍶 Three-Miso Tasting Experience

The workshop also includes a guided tasting of three different handcrafted misos.

You'll explore how different beans and aging periods can change miso's flavor, aroma, color, and depth.

The tasting may include:

  • Yellow soybean miso
  • Red soybean miso made with rare Japanese beans
  • Chickpea miso or red bean (azuki) miso

Miso will be served with prepared miso soup and fresh vegetables so you can experience the different varieties in a practical way. Tasting varieties may change based on seasonal availability.

🎁 Take Home Your Own Miso

Each participant will take home approximately 1.5 kg of handmade miso, along with a fermentation guide and tips for aging it successfully at home.

The class is fully hands-on, and each participant makes their own batch rather than simply watching a demonstration.

The instructor, Hitomi of KOJI & More, was born and raised in Japan and has visited traditional Japanese miso breweries to learn more about natural fermentation and long-aged miso.

Family-friendly: No knives or stovetop cooking are involved. Children may participate with a parent or guardian.

Vegan: The miso-making process itself is naturally vegan. A vegan tasting option using kombu and shiitake dashi is available with advance notice.
