Specialty BBQ restaurant is brainchild of long-time professional chef and Marin County native

Pig in a Pickle barbeque, the newest addition to the great variety of culinary choices available at Town Center Corte Madera, will offer a mouthwatering assortment of barbeque dishes delivered straight from the restaurant’s custom smokers.  Pig in a Pickle is the brainchild of professional chef and Corte Madera native, Damon Stainbrook, who after years of cooking at high end restaurants and a stint as a private chef,  will now become proprietor of his own restaurant specializing in barbeque sandwiches, delicious side dishes, and special items smoked on the premises. Pig in a Pickle will open in early spring, and will be located next to Blue Barn Gourmet, across from The Counter.  www.shoptowncenter.com

Pig in a Pickle’s Damon Stainbrook, worked in the restaurant business as a chef since the early 90’s when he worked for Executive Chef Bradley Ogden at Lark Creek Inn.  Since then, he worked in a variety of capacities at high end restaurants in San Francisco including as Poissonier at Heights Restaurant, Grill Cook at One Market Restaurant, Lead Line Cook at American Bistro, and finally as Sous Chef under Thomas Keller at French Laundry.  From 2003-2011, Damon worked as a full time private chef for a family in Atherton, CA during which time he traveled to thirteen countries with the family and experienced the cuisine of many different cultures.

 

“I chose the location of the Town Center because it feels like home, and the Center drives a lot of traffic,” said Damon Stainbrook. “It’s exciting, after all these years of cooking, to finally have my own restaurant in a great location that feels right. I am looking forward to meeting our customers and sharing my love of BBQ!”

 

Pig in a Pickle at Town Center will smoke their meats on the premises, and will feature BBQ favorites such as pulled pork, brisket and chicken sandwiches, baby back ribs, hot links, bratwursts, and popular side dishes like mac ‘n cheese, collard greens, slaws, and savory beans.

Seasonal items like fresh corn will be available as will a fresh fish selection.
