Pumpkin Toffee Delight: Reader Recipe Of The Week
Walnut Creek Patch reader June shared a simple pumpkin toffee recipe that's been handed down for many years.
Just in time for at-home Halloween festivities, Cooking with Courtney is bringing you a delectable new pumpkin treat, thanks to June of Walnut Creek.
Her Pumpkin Toffee Delight recipe is "a favorite that has been handed down for many years," she wrote.
Ingredients
- 15 oz. can of pumpkin puree
- 3 large eggs
- 1 box yellow cake mix
- 12 oz. can of evaporated milk
- 2 tsp. cinnamon
- 1 1/2 cup sugar
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cloves
- 2 sticks of butter
Instructions
- Mix all ingredients, except cake mix, together.
- Pour into a greased 9" by 13" pan.
- Sprinkle one box of yellow cake mix over the pumpkin mixture and pat down gently.
- Drizzle 2 cubes of melted butter over everything.
- Bake at 350°F for 50-60 minutes.
