Salt & Straw's Flower Beloved May Flowers Series Returns

Starting on May Day on May 1, Salt & Straw scoop shops unveil their new monthly series focusing on floral flavors.

It was a celebration of the bounty of springtime ingredients coming, Salt & Straw co-founder and head ice cream innovator Tyler Malek’s created five new May flavors for ice cream fans.

Those who visit a Salt & Straw scoop shop and order one of the flavors will receive a free edible flower on top.

Tasting all five flavors, I rated them 1 to 5 for texture, flavor profile and creativity No one received a low one, but all were in the fours and five out of five, meaning terrific.

Coffee Chamomile Sherbet — 5/5

This can't-believe-its vegan sherbet is one of the biggest surprises of the tasting. It tastes remarkably like a lightly sweetened cold brew enhanced with chamomile and finished with creamy oat milk. The floral coffee aroma lingers beautifully, creating the sensation of sipping an iced latte while in a blooming spring garden.

Rhubarb Crumble with Toasted Anise — 4.5/5

Bright tart rhubarb meets buttery crumble and notes of toasted anise in this beautifully balanced ice cream scoop. The interplay of sweet and tangy flavors, combined with the crumble texture, made every bite feel comforting and perked up my palate.

Saffron Milk with Wildflower Honey — 4/5

Visually stunning with its vibrant yellow saffron hue, Tyler created this flavor drawing inspiration from ancient frozen desserts. The wildflower honey adds a rich floral depth that reminded me of Salt & Straw’s iconic Honey Lavender, while some may think it is flat and a little too sweet.

Jasmine Milk Tea Almond Stracciatella — 5/5

This was an instant favorite. Fragrant jasmine tea-steeped cream is folded with shards of dark chocolate almond stracciatella, creating a luxurious contrast between silky and crunchy textures. Think chocolate chip ice cream, but infinitely more refined and aromatic.

Strawberry Tres Leches — 4.5/5

One bite and the jammy strawberry swirl with creamy tres leches inspired ice cream puts a smile on a strawberry lover's face. This smooth ice cream is layered with soft cake pieces and ribbons of strawberry jam. It's sweet and decadent delivering both comfort and complexity.
