Health Challenge - Eat Your Vegetables! - Update

How did it get to be Friday already? I hope everyone had a great week.

Last Monday I issued my second health challenge, which was to eat a vegetable with every meal. I have to admit, this was a difficult challenge for me. I love vegetables, but I didn’t realize how many of my meals were actually missing them. My wife and I have started juicing in the morning and supplementing our breakfast with a mixture of vegetable and fruit juice. This has been a great way for me to get my serving of vegetables every morning.

Previous to juicing, I almost never had any vegetables with breakfast, which is a shame because it really is the most important meal of the day. The rest of the meals were saved by spinach. I ate raw spinach on everything. Deli sandwiches, burritos, quesadillas, grilled cheese sandwiches…you name it, they all got the spinach treatment.

This has been a busy week for me and my wife, so we didn’t really ever have dinner at home together all week. It was mostly just me rushing around trying to throw something together before I ran out the door. Just having a bag of baby spinach in the refrigerator made it possible for me to complete the challenge. My goal is to keep going forward with vegetables at every meal, but mix it up a little bit. The amount of vitamins that you get from the different colored vegetables is difficult to beat...even with a multi-vitamin.
