
This was a dish I made for my final exam in my culinary class. We had to pick a dish and cook it from scratch.
I chose ravioli, but I didn't want to do a simple version. The purple dough was colored with some cooked beets, not food coloring. I punched out a design in the top layer to reveal the purple dough in the middle.
The filling was a mixture of fire roasted red peppers, poblano chilies, and jalapeños. I also mixed them with cream cheese, ricotta cheese, smoked Gouda, Dill Havarti cheese, salt, pepper, and some diced parsley.
