Local Recipe: Italian Sandwich

A simple Italian sandwich that can be made with ingredients picked up at the Sunday Harvest Market.

A bright summer picnic can be a delight, as long as the food doesn't spoil. You won't have to worry about mayonnaise sitting in the hot sun with this Italian sandwich, because there isn't any mayonnaise in it! Ingredients can be gathered at the or from your home-grown garden.

 

Ingredients:

Baguette, ciabatta or pain rustique bread

Good quality olive oil

Sea salt

Sliced tomatoes (heirloom are nice)

Sliced mozzarella cheese

Basil leaves

An selection of olives


Slice the bread lengthwise making the bottom a bit thicker than the top. Drizzle the top and bottom with olive oil and sprinkle with salt. On the bottom, put a layer of sliced tomatoes, then mozzarella and finally basil leaves.  Cover and wrap tightly in foil.  

The tomato juice will slightly soften and flavor the bread. Bring a knife to slice baguette into individual sandwiches. Serve with olives.
