Learn to Make Sausage with Dave the Butcher on Nov. 7

Celebrate a late Oktoberfest by learning to make your own sausage with David Budworth, the Bay Area's celebrity butcher, in a special hands-on class from 6:30 to 9 p.m. Thursday, Nov. 7, at Fresh Starts Chef Events in Novato.

The presenter, known as Dave the Butcher to his customers at Marina Meats in San Francisco, has years of experience in choosing and mixing ingredients for handmade sausages. Along with making their own, guests will feast on two special varieties created by Marina Meats.

The menu:

  • Handmade soft pretzels with housemade mustards
  • Marina Meats specialty sausages
  • Braised red cabbage and orchard apples
  • German potato salad with warm vinaigrette
In the kitchen, Dave the Butcher will lead guests in making both lamb and pork crepinettes, a traditional French sausage wrapped in caul fat. They also will try making two premixed sausages from Marina Meats with a sausage stuffing machine.

To cap off the evening, everyone will gather for a communal meal accompanied by tasting of wares from Baeltane Brewing in Novato. What pairs better with sausage?

The event takes place in the showcase kitchen at the Next Key Center, 1385 N. Hamilton Parkway, Novato. All proceeds benefit shelter and job-training programs at Homeward Bound of Marin.
