Factory Churns Sweets Sold in Palos Verdes

From sourcing cacao beans to concocting recipes, Marsatta Fancy Chocolates takes premium to another level.

has a crew of just three people, but its gourmet confections are making mouths water throughout the South Bay.

Jeffray Gardner, the Redondo Beach factory's owner and chocolate maker, sometimes starts work as early as 4 a.m., depending on the day's creations and whips up chocolates from scratch. The lighthearted father of three sources cacao beans from all over the world, and with the help of his wife, Naomi, and intern, Floriane Ravery, the three make chocolates using only the purest ingredients.

Lately, the 89 bar with its 89 percent cacao content is making waves. Just like the signature bar, all Marsatta products glaringly omit fillers and preservatives—and companies are noticing. Besides selling at local farmer's markets and Sea Beans at Terranea Resort, Marsatta chocolates are also featured at Nordstrom's special events and are nearing their way to landing on the shelves of Whole Foods Market.
