Waffle Sandwich Shop to Replace O.C. Burger Location
Bruxie will open its third Orange County location. It offers sandwiches made from waffles. Mmm, waffles.
The revolving door that sits at the corner of El Portal and El Paseo in Rancho Santa Margarita will get a new tenant this spring.
Bruxie, a quick-serve eatery that specializes in sandwiches made with waffles instead of bread, will take over the location formerly occupied by OC Burger.
This will be the third Bruxie in Orange County. The restaurant serves more than a dozen sweet and savory gourmet waffle sandwiches. Chefs, partners and concept creators Dean Simon and Kelly Mullarney, who opened their first Bruxie location in 2010 in Old Towne Orange, and second location one year later on the Birch Street Promenade in Brea Downtown, will open this location at 22205 El Paseo.

They expect to open for business in late April or early May.
“It’s hard to believe that we introduced the Bruxie concept to Orange County about 15 months ago,” Simon said. “The response from the public has been outstanding and has led our expansion to this third location in Rancho Santa Margarita.”
The RSM restaurant’s menu will mirror its sister restaurants’ menus by offering Bruxie’s unique takes on authentic Belgian waffles, alongside salads, locally produced old-fashioned cane sugar sodas, real Wisconsin frozen custard, shakes, sundaes and floats. Bruxie serves Peet’s Coffee & Tea products, and nothing on the menu exceeds $10.

“Our menu puts a unique twist on classic foods, with the addition of a waffle that is crispy, light, and yeasty,” Simon said. “We have also gained quite a reputation for our real Wisconsin frozen custard, which is the base of our shakes, floats and sundaes.”
The Bruxie menu features two types of Belgian waffles. First, the Brussels waffle, used to produce all Bruxie sandwiches, is not sweet in taste, and when cooked, its yeast aroma is reminiscent of freshly baked bread. The Liege waffle, is a more dense, sweet waffle, with Belgian-pearl sugar baked into it.
Bruxie is currently open daily in Brea at 215 W. Birch Street and Old Towne Orange at 292 N. Glassell Street at Palm Avenue. For more information, including full menus, visit the Bruxie website.
