La Cabana Owner Partners With Local Breakfast Legend
La Cabana partners with Sandy's 101 Omelets in a step toward expanding to more locations.

Since its shift to include a breakfast menu a year ago, North Texas location in Fairfield has offered morning dishes. Now with the restaurant’s change in name to Sandy's 101 Omelets, owner Ramses Solis is giving visitors 101 more ways to do breakfast.
“I believe that was a proper move on my end,” Solis said. “That location is suited for breakfast.”
Solis said after a year of opening La Cabana’s Fairfield location, the restaurant began to offer a breakfast menu. The breakfast items on the menu had done so well, he had a hunch to start working to change the focus of the restaurant to mainly breakfast. In August he also began working with a breakfast veteran, Sandy Calvert of Sandy’s 101 Omlettes. Sandy had previously ran a restaurant down the street on North Texas by the same name for 20 years.

“She had retired for a year and she became my customer then I asked her if she wanted to be in a 'marriage' with La Cabana,” said Solis.
After pulling her out of retirement, the two began to make plans for the restaurant together. The hours would be 6 a.m. to 2 p.m. and menu items would only be breakfast and lunch. They switched the name to Sandy’s 101
Omelets, specializing in 101 different types for customers.

“We decided to go with a reputable name and with somebody that has a lot of knowledge about breakfast — that was Sandy,” he said.
The merge Solis jokingly calls a marriage is just the first of many steps he hopes within the partnership. This is just the honeymoon, so to speak. He hopes to open more locations with Calvert, who he says is just as passionate about cooking great meals as La Cabana.
“She has a lot of heart , just like myself,” Solis said. “We really put our love into cooking and making sure that things are great at all times and I just hope for La Cabana and Sandy’s to grow.”
Those wishing to get Mexican food can still visit the
