Liz D'Arcangelo, 17, of Avon CT met with the clients of St. Gerard's in Hartford on February 25 to conduct a nutrition and cooking class. St. Gerard's Family Center provides resources for pregnant women and families with children 2 and under. The class included food prep safety, hands on cooking, the benefits of home cooking, nutrition and the dangers of fast food. The participants helped prepare the food and then had a sit down lunch. Liz solicited donations from her neighbors to make gift bags of spices, oils, honey and vinegar. Liz also created a 50 recipe cookbook based on a SNAP budget filled with easy to prepare but nutritious meals. Ms. D'Arcangelo met with the women again in April to discuss healthy snacks and drinks and to lead a discussion on what the women did differently. Liz is a member of Avon Troop 66142 and has been a girl scout since the first grade. She has participated on multiple girl scout trips including Yosemite, Puerto Rico and Martha's Vineyard.
