New in Brookfield: Celtic Cottage Bakery Offers Unique Easter Sweet Treats
A Brookfield mom opened The Celtic Cottage, a unique bakery specializing in Irish-American baked goods offering regular & gluten-free items.
Brookfield, CT — Fresh off the heels of a successful grand opening pop-up at Molly Darcy's in Danbury St. Patrick’s Day weekend, Wendy Mitchell, owner and baker of newly opened Celtic Cottage LLC, is gearing up for a busy Easter season — continuing to bring traditional Irish baked goods and organic, farm-fresh ingredients to the community.
Mitchell, a culinary professional with more than 20 years of restaurant industry experience, returned to the food industry, having recently completed her ServSafe food handling certification and getting licensed as a CT Cottage Kitchen after 15 years in nonprofit work and community service.
“I wanted to get back to my roots,” Mitchell said. “Great food, family traditions, and gathering with friends and family over the holidays and special occasions have always been at the heart of who I am.”

The Celtic Cottage LLC features a variety of traditional Irish favorites and gluten-free items, including:
- Irish Soda Bread & Muffins (gf available)
- Irish Brown Bread
- Sourdough Bread & Cinnamon Rolls (gf available)
- Blueberry, Strawberry, Cranberry-Orange, and Chocolate Chip Scones (gf available)
- Shortbread and Sugar Cookies (gf available)
- Millionaire's Bars, an Irish sweet treat that includes a layer of shortbread, a layer of caramel and a layer of melted chocolate (gf available)
- Seasonal and holiday-inspired specialties such as Easter cookies, Easter Bundt Cake, hand-rolled truffle pops and more (gf available)
As the business transitions into spring, Mitchell is preparing a festive Easter menu alongside custom orders for seasonal celebrations.

Mitchell’s Irish heritage traces back to County Kerry and County Cork on her father’s side. Family visits and time spent with her grandparents, whose family hailed from Kilkenny, helped shape her appreciation for Irish traditions.
“As my daughter became involved in Irish dance and I became more engaged in the Irish community, I discovered something magical about Irish traditions — the storytelling, the music, and the way history is passed down through generations,” she said. “I want to preserve that and share it.”
Mitchell has been actively involved with the Greater Danbury Irish Cultural Center since 2010, serving on various boards and committees. In 2022, she was honored as Lady Hibernian of the Year by the Ladies Ancient Order of Hibernians, Mary McWhorter Division.
“I’m grateful to the families and individuals who have carried on their traditions and shared them with me,” she said. “I’m excited to continue growing The Celtic Cottage and sharing it with my community.”
As an individual with food allergies and family members who are gluten-free, Mitchell understands the importance of baking items that are delicious and safe for all to enjoy.
Mitchell accepts special orders and will be participating in the Newtown, Trumbull and Kent Farmers markets this season. In addition, The Celtic Cottage will be a vendor at Newtown Earth Day on Saturday, April 25 from 10 a.m. - 3 p.m. at Newtown Middle School and at New Milford GOAT Days on May 15 - 17 at Young's Field.
