Iconic CT Pizzeria Coming To Fairfield
New Haven classic Sally's Apizza has plans to open a restaurant in Fairfield, a Sally's representative confirmed.
FAIRFIELD, CT — A historic Connecticut pizzeria has plans to open a Fairfield location.
The new restaurant is part of an ongoing expansion for New Haven icon Sally’s Apizza.
“We will have a Fairfield location,” said Krystina Nataloni, marketing director for Sally’s. “I don’t really have further details right now.”

Nataloni was unable to provide the address of the future Fairfield restaurant when reached Wednesday.
Sally’s is in the process of growing its footprint across the state, and is opening its first-ever location outside of New Haven on Thursday. The 4,000-square-foot restaurant at 66 Summer St. in Stamford will feature the honey-oak paneled interior and red-and-white brick pattern diners may recognize from the original Wooster Street location.

Founded by Salvatore "Sally" Consiglio in 1938, Sally's is known for its signature tomato sauce and chewy, crispy, charred crust, according to a Sally's news release about the Stamford opening. Consiglio developed a dough formula that worked with a specific coal-fired oven design.
“He worked on different methods to shred the mozzarella and special techniques to apply the toppings,” said Consiglio's son, Bob Consiglio, in the news release. “These exact same recipes, techniques and ingredients are still how we make the pizza today, in our original location, and now in Stamford.”
With a Sally’s location in Fairfield, residents won’t have to leave town to sample both of the pizzerias associated with the decades-old question about New Haven pies: Sally’s or Pepe’s? Frank Pepe Pizzeria Napoletana already has an eatery in Fairfield.
In addition to its Stamford and Fairfield locations, Sally’s has plans to open restaurants in Norwalk and Wethersfield, according to the Stamford Advocate. A Sally’s location is also listed as “coming soon” on the website of the Woburn Village complex in the Boston-area city of Woburn, Massachusetts.
