New Small-Batch Ice Cream Shop Opens in Fairfield

Milkcraft, a 'Cow-to-Cone' shop, features liquid nitrogen mixers and 'Hong Kong Bubblecones.'

FAIRFIELD, CT — Fairfield’s new all-natural small-batch ice creamery, featuring liquid nitrogen mixers, will officially celebrate its grand opening with a ribbon-cutting ceremony on May 23.

Milkcraft recently opened its doors at the Brick Walk and is a “Cow-to-Cone” shop that features locally sourced ingredients and fresh milk from local farms.

“If you’re expecting powder laden with chemical ingredients poured into a softserve machine, and kept frozen for weeks, look elsewhere,” Milkcraft management said in a press release. “Everything at Milkcraft is made to order in dramatic fashion right before your eyes, including the ice cream. What’s cooler than cool? Liquid nitrogen. The liquid nitrogen freezes the local farm-sourced milk-base before your eyes ensuring that ice crystals that would otherwise form in a batch freezer never do, and that you enjoy the smoothest ice cream you’ve ever tasted.”

The menu features made-to-order waffle cones and donut-ice-cream sandwiches described as Hong Kong Bubblecones and CreameeBuns.

Milkcraft’s made-to-order ice cream is offered in these freshly baked Hong Kong-style egg waffle cones (think waffle cone mixed with Belgian waffle) or in one of its CreameeBuns (think hot-sealed locally baked glazed buns stuffed full of Milkcraft’s artisan ice cream flavors).

A proprietary recipe, honed from years of research by Milkcraft’s travels in Hong Kong, and throughout China, makes the unique Bubblecones sweet and savory while having a light crispy texture, according to the press release.

Milkcraft’s seasonally updated menu showcases its sustainable, organic and local ingredients, and offers flavors like “Miss Piggy Does Vermont” made with Heritage Farms smoked bacon and Vermont maple syrup and the “Bourbon Breakfast” with Madecasse vanilla bean, corn flakes.

Another flavor that will remind you of drinking up every last drop in the bowl after finishing your cereal is the “Milk & Cereal” with all-natural vanilla and Fruitee O’s.

Milkcraft is the first Fairfield restaurant concept by the Milkcraft team, whose company opened Connecticut’s most iconic Italian restaurant—Spazzi—in the 90s directly behind the new Milkcraft location in the Brick Walk, according to the press release.

The ribbon-cutting ceremony will take place promptly at 4:30 p.m. on Monday, May 23 at 1215 Post Road in Fairfield.
