
I have to confess I never did make the kale and green bean salad I linked to in my last post. Instead I used the green beans and edamame that was left over from Wednesday's market to make a 2-bean (and corn, and other stuff) salad. No recipe since unless I'm baking or canning I usually just wing it, but here's what I did:
1. Steam the edamame for about 5 minutes (you can throw the green beans in too, but I cooked them separately since we were eating them hot for dinner that night), then run cold water in the pan and dump them into an ice water bath.
2. Cook the green beans (if you haven't already) just 3-5 minutes and do the same with them.
3. I cheated and threw some frozen corn in the water then drained it all (I don't grow corn, my dad does but his isn't even ready yet).
4. Shell the edamame, put everything in a bowl, drizzle a little olive oil and Ponzu sauce (soy sauce with lime, you can skip this part) over it all, stick it in the fridge for a day or 2 (we were busy this weekend).
5. When ready to serve, cut up some tomato or halve cherry tomatoes (I threw in some sliced baby carrots from Wednesday's market too, for some crunch). Squeeze fresh lime juice over it all, salt and pepper to taste. Some fresh cilantro would be good but mine all bolted and I'm waiting to harvest the seeds.
Pretty good cold "bean" salad - better than cold canned beans! You could serve this warm too (you can cook edamame like lima beans), but I think I'd skip the Ponzu and lime, the carrots too, and make it more like a succotash. Now that the Kentucky Wonder pole beans (a flat string bean) are coming in, I guess I could make a 3-bean salad. Check back for that "recipe" ;-)
I won't be at market this Wednesday, but if anyone wants anything they can always email me and make arrangements to stop by. I'm trying to get back-to-school shopping, pool time, and a day trip all squeezed in this week so I can't say when our "stand" (otherwise known as the garage) will be open. Edamame has a very short harvest window (10-14 days) so it'll be done by the end of the week. I did just pick quite a bit today.
I hope to have tomatoes and peppers at market on the 28th or the first Wednesday in September, if I don't I don't think we'll go to market. But be sure to stop by the Shinder Farm on Saturday September 7, I'll have a table set up there!
