Cajun Corn Casserole

Quick, Easy and Soooo Good!

This is a real Southern dish, and quite hardy. For a variation, add two diced slices of bacon and/or some finely chopped red and green bell pepper.

Ingredients:

½ cup melted butter

2 large eggs, beaten

1 8.5 oz package corn bread mix

1 15 oz.can whole kernel corn, drained

1 14.75 oz can creamed corn

1 cup sour cream (regular, not low fat)

2 slices bacon, cooked and chopped (optional)

½ finely chopped red and green bell pepper, (optional)

Instructions:

Preheat oven to 350 degrees.

In a medium bowl, combine butter, eggs, cornbread mix, whole and creamed corn and sour cream.  Spoon mixture into prepared dish.

Bake for 45 minutes or until the top is golden brown.

Serves 6.
