Culinary Star Comes To New London's Schools

Famous Chef Daniel Giusti whipping up school cuisine for local students.

NEW LONDON--Farewell French fries.

Students in New London public schools soon will be munching on fresh recipes created by world-renowned Chef Daniel Giusti .

Under the pilot program of the culinary star’s new company, Brigaid, an estimated 3,300 students will be dining on more nutritious foods in the school cafeterias as part of the three-year program.

Giusti is the former head chef at Noma restaurant in Copenhagen, rated the number three restaurant in the world.

A long way from Denmark, the chef’s Brigaid is kicking off his venture in New London in July 2016. The school district is Brigaid’s pilot program.

“We chose New London, Connecticut as our first pilot program. We’ll establish a proven model, and expand where (and how) our work takes us as we learn more about where our impact is biggest. We don’t know where exactly we’ll go next, but we dream big — and it could be anywhere,” he states on his website.

Giusti’s company is “dedicated to our mission: transforming the way schools serve meals to America’s schoolchildren,” according to the company’s website. “Over the coming months, Brigaid will help schools rethink the design and functionality of their kitchens and recruit talented chefs to bring their dedication and passion to serving kids and communities.”

The New London Board of Education approved a three-year-contract with Brigaid on Wednesday, according to The Day.
