Mystic Resident Dan Cahill Named Restaurant Manager at The IRONS at Hilton Mystic

In his new role, Cahill will manage the hotel's signature restaurant and will work closely with its chefs.

MYSTIC, CT – The Mystic Hilton announced the appointment of Dan Cahill to Restaurant Manager of The IRONS restaurant Friday.

In his new role, Cahill will manage the hotel’s signature restaurant and will work closely with its chefs to maintain operational standards and ensure guest satisfaction. Additionally, Cahill will supervise restaurant staff, manage the restaurant’s financial objectives, and contribute to marketing initiatives.

“I am thrilled to join the team at the Hilton Mystic and The Irons,” Cahill said in a release. “I look forward to ensuring an excellent dining experience for each and every one of our guests by motivating my team to surpass expectations.”

Cahill comes equipped with a strong background in the hospitality industry with extensive knowledge and experience in menu development, marketing, training and managing restaurant staffs.

“With his extensive background in the hospitality industry and his proven track record in restaurant management, Dan will be a strong asset to our team,” Hilton Mystic General Manager Terri Almond said in a release. “I am confident he will ensure The Irons continued presence at the forefront of Mystic’s dining scene.”

Prior to joining The Irons, Cahill served as restaurant manager at the Harbour House at the Inn at Mystic where he was responsible for the daily operation of a full service restaurant and bar located the historic Inn, developed the seasonal bar/beer menus and created effective promotions and oversaw marketing efforts.

From 2010 to 2014 Cahill served as area director and general manager of Bobby’s Burger Palace, where he oversaw multiple locations across the country for celebrity chef Bobby Flay’s. At Bobby’s Burger Place, Cahill was responsible for hiring, training and coaching all of management, culinary and front of house team members.

Before moving to the Connecticut area Cahill began his career in the restaurant industry by working for startup brewery, Brew Moon Restaurant and Brewery in Boston, MA. Dan worked started as a bartender but soon moved on to brew moon’s brewing department and was instrumental in many of their awarding winning beers.

Brew moon was purchased by Rock Bottom Restaurants, Inc. of Louisville, Colorado, where he was a regional field marketing manager for the East Coast and Midwest Region for nine years. Fourteen years of brew pub experience gave Dan an extensive beer and brewing knowledge which he will be bringing to The Irons beer and cocktail lists.

He currently resides in Mystic with his wife, Miranda, and two children, Annalyn and Shea.
