Chef Gaetano's Top 5 Kitchen Must-Haves
If Chef Gaetano from Ortygia were stranded on a deserted island, he would bring these 5 things for his island kitchen.
I recently returned from the National Restaurant Association's Chicago Food Show and its world of gadgets and technology. I picked up some cool "toys" for the kitchen, which I'll share later but I first wanted to share these thoughts today:
Someone recently asked me "Guy, what are five things you couldn't live without in the kitchen?" After giving it some serious thought - actually it only took about 30 seconds - I came up with this list:
1. My chef knife. It's a Wusthoff from like 1955. My Dad used it, and it can still slice a zucchini into paper-thin slices. It's amazing and I couldn't do what I do without it.

2. Extra Virgin Olive Oil from Olio Mazzone. I know this list starts off like I'm some kind of brand schill but really, Mazzone is the best. Their stuff is top grade and it really does make a difference in cooking.
3. Fennel. The best stuff comes from right here in Manatee - King Farm Myakka. Organic and local, need I say more?

4. Artichokes. While this may not be a local staple, you can still find great artichokes for your dishes. Look for ones that are firm, green and "heavy" for their size. They should be as blemish-free as possible and tightly closed for best quality.
5. Salted capers from the Island of Pantelleria. Mmmmmm capperi salati. If you think you know capers, think again! You can get these in specialty/gourmet stores and of course through Amazon.com (what can't you find there?!). The flavor they add is amazing.
So there you have it ... If I were stranded on a deserted island and could only bring 5 kitchen things, here's what they would be. What about you?
