  • Why so many choices? We we strive to remove as little metal as possible off of the blade, based upon the condition of the blade edge. Many times a simple hand sharpening and honing will do the trick. Other times we have to grind with machines to achieve the proper 15 or 20 degree edge to bring a knife back to specifications.
