The Watermark at Trinity hires local talent to serve as Executive Chef, Director of Dining Services
Previous experience includes the Loews Don CeSar Hotel and Palma Ceia Golf and Country Club
TAMPA, Fla. (Feb. 26, 2016) — Preparing to open its doors and welcome residents in April, The Watermark at Trinity has hired Josh Marlowe as Executive Chef and Director of Dining Services. The community, which is located in the Pasco County suburb of Trinity, will provide assisted living and memory care services.
Previously, Marlowe served as the Executive Chef of The Fountains at Boca Ciega Bay, a sister-property of The Watermark at Trinity, located in St. Petersburg.
“We are thrilled to welcome Josh back to the Watermark team,” said Aileen Carlson, Executive Director of The Watermark at Trinity. “When it came time to fill the role of Executive Chef, I couldn’t think of anyone I’d rather have in that position.”

Prior to joining The Watermark at Trinity, Marlowe was a partner and Executive Chef at Mind Your Manors, an upscale gastro pub in Wilton Manors, a suburb of Fort Lauderdale.
Marlowe moved to the Tampa Bay area when he was a teenager, and after completing culinary school at Le Cordon Bleu in Dover, N.H., moved back to the area to try his hand at the local restaurant scene. During his career, he has worked in the kitchens of local landmarks such as the historic Loews Don CeSar Hotel and the Palma Ceia Golf and Country Club, and beloved restaurants including The Brunchery and Wright’s Gourmet House.

“I’ve worked in a number of professional kitchens and learned a great deal along the way - all kinds of cooking styles and techniques that have helped to shape who I am today,” said Marlowe. “This experience has taught me how to balance quality, taste, presentation, variety and nutrition for an extraordinary dining experience, whether it’s a custom dish for one or a party of 300. ”
Unique to The Watermark at Trinity is the Thrive Dining program, which allows residents with cognitive, neuromuscular and chewing disorders to eat the same nutritious meals as other residents, served as one- and two-bite hors d’oeuvres. This allows residents to maintain their independence and dignity, and reduces unintentional weight loss.
In his role as Executive Chef, Marlowe will oversee all kitchen operations, including hiring and training staff, planning and executing the menus, and ensuring that the food and service meets The Watermark at Trinity’s high standards. In addition, he will plan and host cooking demonstrations and tastings for residents and guests.
