Fleming's New Steak Menu is a Cut Above

I recently attended an exclusive media tasting of the launch of the new steak and wine menu at Fleming’s Prime Steakhouse & Wine Bar.  The new steak offerings feature dry-aged steaks, bold cuts with new-to-the-menu Steak Companions.  Aiming for an elevated taste experience, the restaurant debuted dry aging preparation for richer, bolder flavor on select cuts and Steak Companions and sauces. 

To begin, we were treated to their Chilled Seafood Tower, which included lobster, shrimp and crab followed by a Fennel & Orange Salad, Crisp Pork Belly, Mustard Vinaigrette.  The pork belly simply melted in my mouth and the vinaigrette was so flavorful – I’d love to get the recipe and try making it at home.  As the new menu launch includes new dry aged cuts, I ordered their new Prime Dry-Aged New York Strip with two side companions:  King Crab with Herb Butter and the Flavor Trio. 

For those of us who weren’t familiar with wet vs. dry aged, the Fleming’s team provided how each is aged:  Dry Aged – Cuts aged a minimum of 21 days allowing a richer, bolder flavor with a distinctive nutty note (available for the Prime New York Strip and the Prime Dry Aged Ribeye); and Wet Aged  - Cuts aged a minimum of 21 days providing a juicy, flavorful and savory bite (available for the main, bone-in, petit and Newport filet mignons, prime bone-in Ribeye and Prime New York Strip).  Also, the restaurant is featuring new cooking techniques for the steak.  Guests can either enjoy their steak cut classically seasoned with kosher salt and black pepper then broiled at 1600 degrees OR iron-crusted and finished with butter and fresh parsley.

My steak was cooked perfectly and I did note a nuttier flavor than the typical wet-aged.  The King Crab was also delicious but it was the gorgonzola and mascarpone brulee from Flavor Trio that stole the show.  I age about half of my steak and made sure to get my fill of the Fleming’s Potatoes.  As far as dessert goes, Chef Brandon made a special creation that evening - Cappuccino S’Mores Dessert which I still think about – a Chocolate lava filling with graham cracker crust topped with marshmallow filling served in a cappuccino mug.

Additionally, the restaurant is offering private dining incentives for the holidays.  The earlier Guests book, the bigger the reward.  Guests who book by October 31 - Receive a $50 Dining Credit for every $500 you spend. Plus, each lunch Guest receives a $25 Dining Card to enjoy on a future visit.  Guests who book by November 22 - Receive a $50 Dining Credit for every $1,000 you spend. Plus, all Guests receive a $25 Dining Card to enjoy on a future visit.
