• Observed raw chicken stored over ready-to-eat food lettuce in main kitchen walk-in cooler. CA: Storage was corrected based on final cook temperatures.
• Observed raw, shelled eggs stored above ready-to-eat bread in main kitchen walk-in cooler. CA: Storage was corrected based on final cook temperatures.
• Observed mold along the interior of ice machine. CA: All food contact surfaces must be cleaned and sanitized.
• Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit (see "temp observations"). CA: Items were discarded.
• Observed potentially hazardous food not held at 135 degrees Fahrenheit or above (see "temp observations"). CA: Items were discarded onsite.
• Observed cooked potentially hazardous beef chili not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. CA: Container of chili was placed in an ice bath and rapid cooling measures were enacted.
• A follow-up inspection will be held on March 7.

• Observed debris build up on the food contact portions of the meat slicer. CA: All food contact surfaces must be cleaned and sanitizer between each uses.
• Observed multiple potentially hazardous food items stored at the self service area maintaining temperature above 41 degrees F (see "temp observations"). CA: Staff was informed that all cold held items must maintain temperatures of 41 degrees or lower. Advised that items in containers be stored in an ice/water mixture in cold holding unit rather than just on ice. Items with time to cool underwent rapid cooling measures and items without time were discarded.
• Observed container of sliced chicken hot holding on grill maintaining 84 degrees Fahrenheit. CA: Item was reheated to 170 degrees. Education on proper hot holding temperatures and reheating measures was provided.
• Observed potentially hazardous raw beef thawed in standing water. CA: Thawing must take place in a cold holding unit or under tepid running water. Item was placed in a refrigeration unit.
• Observed items in main kitchen walk in cooler stores on the floor. CA: Items must be stores at least 6 inches off the floor.
• Observed utensils stored in crevices between equipment. CA: In-use utensils must be stored so as to prevent contamination.
• A follow-up inspection will be held on March 12.
