• Observed dishes at 4-compartment sink not being sanitized. All food contact surfaces must be washed, rinsed, and sanitized and then allowed to air dry.
• Observed failure to have items in cold holding units throughout facility date marked. Must date mark anything that has been prepped or opened from its original package.
• Observed failure to have items labeled throughout main kitchen area. Must label items consistently throughout kitchen facility.
• Observed failure to have thermometers inside of cold holding units throughout main kitchen. Must have working thermometers able to measure internal temperature in all holding units.
• Observed missing ceiling tiles in main kitchen area.
• Education provided for the following observations: Make sure to adequately store foods that are in process so as to prevent contamination; If actively in process, loosely cover and it undergoing marination store in cold holding unit; Make sure to wash hands in between tasks; Chlorine sanitizer should have a concentration between 50 ppm and 100 ppm; Cove base molding must be repaired; Food service permit from Fulton County Health Department must be posted for public observation.
