• Observed failure to date mark fully cooked/ready-to-eat TCH foods that have been held for over 24 hours. Items meeting these parameters must have date markings.
• Observed failure to maintain equipment in good repair.
• Observed chlorine test strips failing to accurately measure the concentration of sanitizing solution coming from dish machine. Must get new test strips.
• Observed build up of debris on nonfood contact equipment surfaces throughout main kitchen area. Must clean nonfood contact surfaces so surfaces are free of debris.
