The Independent Baking Company Opens at 7am Wednesday!
Okay, all you bread-o-philes! Time to rise and shine and eat bread!
It's a few months after the original opening date, but the long wait will be worth it: the Independent Baking Company opens Wednesday at 7am in its Lumpkin Street location. It's where Strand was.
The bakery's founder is Thom Leonard, a nationally known bread and wheat maven. In Lawrence, Kansas, he helped found Wheatfields Baker and Cafe, and he is also the author of The Bread Book.
The Five Points baker will focus on bread--all kinds of bread. Having had a baguette from the Independent Baking Company, I can tell you: it will make you think you're in France.
