The Bartow County Environmental Health Department conducted food service inspections March 13-20 at the following establishments:
BURGER KING (Cass White Road) (Food Service Inspections)*

View inspections: March 19, 2018 Score: 87, Grade: B
- Observed raw bacon stored on top of RTE lettuce and peanut butter & jelly sandwiches in prep top cooler. CA: Explained to PIC the importance of separation. PIC moved bacon to bottom shelf of reach-in cooler.
- Observed black mold/dirt debris on inside of drink machine nozzles. CA: PIC had employee clean nozzles.

- Observed no certified food service manager (ServSafe) certificate posted. CA: Informed PIC that I must be able to verify that the facility has a CFSM and it must be posted for public view.
- The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. CA: Provided PIC with employee health policy forms. PIC must provide documentation stating that certain foodborne illness must be reported to the PIC. Correct by March 26.
- Establishment does not have established procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. CA: Informed PIC that the facility must have a bodily fluid clean-up kit in place. Correct by March 26.
- Observed no copy of latest inspection report posted. CA: Informed PIC that a current copy of the inspection report must be posted for public view at all times.
- Observed worn/missing seal between the 3-comp sink and wall. CA: Pointed out to PIC and it was stated that a work order had been placed. Will be back to do a follow-up.

- Observed improper vertical separation of raw animal foods and ready-to-eat foods. CA: Showed PIC the Proper way to vertically stack/store foods.
- Observed potentially hazardous food (frozen scallops) thawed in standing water. CA: Food was discarded and PIC was shown how to properly thaw frozen foods using running water.
- Wet wiping cloth not stored in sanitizing solution between uses. CA: Cloths were re-cleaned and clean cloths were placed in solution.

- Observed raw animal product being prepped on prep table, where ready to eat foods are prepped and not sanitized after use. CA: After being prompted to do so, prep table was sanitized.
- Observed multiple food items (cooked chicken, sauce, cooked grits) either expired date or not date marked. CA: Items were discarded.
- Cell phones in prep area. CA: Cell Phone relocated.
MOORES GOURMET MARKET (Food Service Inspections)*

- Observed milk stored in reach-in cooler touching raw hamburger meat. Also observed raw chicken touching raw hamburger patties and raw pork. Observed raw shell eggs stored in walk-in cooler touching RTE cream cheese. Also observed raw chicken stored touching raw hamburger meat in walk-in cooler. CA: Discussed separation with PIC. Items were separated. Returned on 3/19 and worked with employees to properly separate all raw meats in their coolers.
- Observed a wet wiping cloth stored at hand washing sink. CA: Cloth was removed. Observed chemical sanitizing solution not at appropriate concentration in bucket below steam table. CA: Employee replaced sanitizing solution.

- The PIC is not aware of his/her responsibility to inform food employees and conditional employees of their responsibility to report information about their health and activities as they relate to diseases that are transmissible through food (i.e., certain symptoms and diagnosis) to the person in charge and for the PIC to report to the regulatory authority. CA: Discussed with PIC that employees must report certain conditions to the PIC, and documentation is needed stating employees were made aware of what symptoms and conditions to report. Employee health policy forms were given.
- Observed black slime build-up in the interior of the ice machine where the lid is located. CA: Informed PIC and it was stated that ice machine would be cleaned.
- Observed a malfunction in the hose that the sanitizer comes out in. CA: Informed PIC that sanitizer hose must be repaired immediately. PIC said owner would be notified to bring sanitizer for the facility.
- Observed old food debris in the crevices of the tomato slicer. CA: Pointed out to PIC and slicer was removed for washing.
- Observed bread liners that had old bread encrusted on them. CA: Notified PIC that bread liners must be removed for cleaning.
- Observed boxes of food (wraps) stored on the floor in the walk-in. CA: Notified PIC and boxes were put up on the racks.
- Observed clean food containers stacked wet after washing. CA: Notified PIC about the proper air drying techniques, also suggested using a drying rack.
- Observed food containers that were broken. CA: Informed PIC that broken containers need to be replaced.
- Observed residue from old labels stuck to the outside of clean food containers. CA: Pointed out to PIC and it was stated that residue would be removed. Suggested options that could remove the residue.
- Observed floors in the walk-in cooler and freezer with accumulated food debris. CA: Pointed out to PIC that floors are in need of cleaning.
- Remarks: discussed with PIC the employee health policy/bodily fluid clean-up kit and the proper usage of test strips for sanitizer solution.
SWHEAT MARKET, INC. (Food Service Inspections)*

View inspections: March 13, 2018 Score: 82, Grade: B
- PIC failed to ensure that foods were being cooled correctly and that the establishment had at least one Certified Food Service Manager. CA: Discussed with PIC about these risk factors and a training will be implemented.
- Observed no certified food service manager for the establishment. CA: PIC stated that they were in the process of getting certified. Will give 60 days to obtain certification.
- Observed a can of red peppers, tuna, and sauerkraut that were dented in the dry storage area. CA: Notified PIC and cans were removed.
- Observed containers of grilled chicken and a big batch of black bean and sweet potato soup stored covered in the reach-in coolers. CA: Notified PIC and discussed the proper cooling methods. PIC then removed items and placed them on an ice bath.
- Observed food containers stacked wet after being washed. CA: Notified the employee in the dish room and PIC. The proper air-drying techniques were demonstrated and discussed.
- Remarks: Discussed the employee health policy and bodily fluid clean-up kit with the PIC.
